Gratitude and Healing Holiday Applesauce RECIPE

I love this time of year!  Though I long for the warmth and ease of summer, I also love the darkness, the bundling up, glowing windows in the evening and sparkling lights, flickering flames of candles, and gathering with family and friends.  

There’s the beauty and abundance, and also all the twists and turns and grief - yes, especially the grief - that has led me to exactly this moment  I have so much to be grateful for.

I'm so grateful for my healthy little boy!

I’m grateful for YOU, and all that you do for your child.  What you do ripples out into the world! 

I’m grateful for all the science about gut health, and how we can nurture and heal our children.

I’m grateful for my clients, who have allowed me into their lives to support them in healing their children.   

I’m even grateful for gratitude!

Yep, gratitude supports gut health!

So gratitude is part of our family routine.

We share gratitudes at dinner, and this supports our digestion and nutrient absorption.  

I write in my gratitude journal every night, and it keeps me in a more optimistic and relaxed (and cooperative!) frame of mind.  

My little boy is just learning how to write, and he eager to start his own gratitude journal!

Expressing gratitude activates the parasympathetic nervous system.  

In other words, it turns on our calm.  

Gratitude turns on our Rest & Digest!

 Gut Healing Apple Sauce

This is the easiest, coziest, most delicious gut-healing dessert.  Cooking the apple skins releases pectin, which seals and supports the gut lining.

 Ingredients:

2 organic apples (green preferred but not necessary)

1/2 cup pure filtered water

Fresh or powdered nutmeg or cinnamon, or both.

Forest brand Simple coconut milk or Tempt brand vanilla unsweetened hemp milk

 Directions:

  1. Core apples and cut into 1/2” - 3/4” cubes, leaving peel on.

  2. Place apple chunks and water in a small saucepan, and heat on medium or medium low heat. Cover and stir every few minutes, making sure the water does not evaporate before the sauce is done.

  3. When the apples are soft and the water is evaporated, remove from heat and stir in nutmeg (1/4 teaspoon or a few swipes over a microplane if fresh) and/or cinnamon (1/2 teaspoon or to taste).

  4. Serve warm topped with coconut or hemp milk and enjoy!

 Variation:

As you shift into a lower-sugar diet, your child’s tastebuds will shift too - this applesauce will be a sweet treat!  If you need to make it a little more attractive at first, try a few drops of stevia glycerite to the apple sauce before serving, or add a few drops of stevia glycerite and a bit of vanilla to the coconut milk.
