Recipes & throat spray - Happy Healthy HOLIDAYS!

I hope you're off to a great start and able to find some minutes of peace here and there... take a few minutes to drink a cup of tea (sitting down!)... ditch the to-do-list for a few minutes to have a laugh with a friend... and BREATHE!  

Just three deep big belly breaths completely switch my nervous system from fight-or-flight to rest-and-digest - and it works for you too.  Do it for you, do it for your kids (but mostly do it for you!)!  

If your family is staying away from triggers to keep everyone behaving and feeling good, the rush of holiday foods might feel overwhelming.  What ever you're doing, it's OK!  Imperfect or even total misses are part of life... and we all get to start over many times, even when we seem to know what we're doing ;)  

Take notes on the things you want to be prepared for next year!  Baby steps are the way to go.  We've adapted a few more things this year (like shortbread cookie cutter cookies and saffron buns for santa lucia day last week... with psyllium husk, saffron and yacon syrup).

And here's a tasty cookie I created for the season:

Peppermint Chocolate Cookies

makes 2 dozen

Ingredients:

1 cup coconut flour (or sub with tiger nut flour)

1/2 cup tapioca or arrowroot flour

1/3 cup cacao powder

1 teaspoon baking powder

1/4 teaspoon Pure Monk powder

3 flax eggs (1 Tablespoons ground flax + 2 1/2 Tablespoons water = 1 flax egg)

3/4 cup coconut oil (or alternate of your choice)

1 teaspoon peppermint extract

1/2 teaspoon yacon syrup

1/4 teaspoon stevia glycerite

1/2 cup Lily's chocolate chips (optional)

Directions:

1.  preheat oven to 375 degrees farenheight

2.  combine dry ingredients in a bowl

3.  make flax eggs, let sit

4.  combine remaining wet ingredients (use a mixer or melt the coconut oil), then add flax eggs

5.  mix it all up together and roll into walnut sized balls

6.  press slightly onto cookie sheet and bake 10 minutes.

Share with friends (or not!) and enjoy!
